Finnish Salmon Soup
Finnish salmon soup
Time: 1 hour
- 2 tbs. olive oil
- 1 onion, chopped
- 1 leek, white part finely sliced
- ½ tsp. all spice
- 2 medium potatoes, peeled and cut into cubes
- 2L chicken stock
- 300g salmon skin removed and cut into 3 cm chunks
- 100ml cream
- ¼ bunch dill, finely chopped
- Juice ½ lemon
In a large saucepan sweat the leek and onions ensuring that they soften but do not colour. Now add the allspice and the potato and coat in the onion mixture. Pour in the stock, season with a little salt and cook over a medium heat for 45 minutes or until the potatoes are soft.
Use a stick blender to blend the soup until very smooth. Stir in the cream the cream and then add salmon pieces to the soup and poach over a low heat for 1 minute. Garnish with dill and squeeze of lemon.
